Baking, Again

I am nothing if not stubborn. After having the first sourdough bread turn out blah I had to give it another try. I fed the starter twice making sure it got good and bubbly. Then I used the recipe for the no added yeast sourdough bread from the King Arthur Flour 200th Anniversary cookbook. It took a day and a half. I placed a pan of water on the bottom rack of the oven and sprayed the loaves with water. It turned out really good. The flavor was good, not super sour but sour enough. The crust was the right combination of chewy and crunchy.

It wasn’t perfect though. I think it could have risen a bit more. I’ve got to get a lame so I get a better cut in the dough before baking.

I’ve got plans for something different next time. Maybe it will work out. Maybe not.

  2. Congrats on the bread and good luck with the next baking project! My next batch of raisin buns are rising right now – these are with cinnamon instead of rosemary.

    Those look great! I made two “loaves” of “bread” (two “mounds” of “eh” to be more accurate) the other day and it was pretty disappointing. I’ve made bread before several years back, but was so hoping to get back into that when the pandemic blew in and everyone bought out all the yeast. Hoping to try again once everything calms down! Happy baking, can’t wait to see what you make next!

  8. This is so great. I am going to ask my husband how the flour stocks are doing at the shops and maybe I’ll start a sourdough starter 😀
