First Bake Of The New Year

My mother in law has been in the hospital and rehab for the past month and a half. She has tired of their food so I’ve been bringing or sending things that I hope will tempt her to eat. Yesterday I baked a batch of banana muffins using this recipe. The recipe is to make a loaf of banana bread but included the time to cook muffins and I thought those would be easiest for her. I thought they looked very tasty but I put them together a little differently than the recipe suggests. I mixed all the dry stuff in one bowl, the wet stuff in another and then folded them together in an effort to not overwork the batter. They ended up nice and tender and have good flavor. The bananas I used were a bit bigger than average so the muffins are moist too. This recipe is a keeper.

  1. Really good to know. I always make banana loaves, but never thought to make muffins from the batter. Will definitely do so next time.
