But They’re So Good

Yesterday I spent way too much time making these eight (yes 8) cookies. It took about 2 hours to mix the dough, cut them out-one at a time, bake them in 2 batches and wait for them to cool. I found the recipe on Pinterest and changed it a wee bit using a sparkling sugar instead of powdered. As I was mixing them I was sure that the consistency of pie crust dough was wrong but when I made a lump with my hands and rolled them out they really didn’t require refrigerating for an hour. They baked in 12 quick minutes. The house smelled like Christmas. The flavor and texture are divine. But all that work for 8 cookies (and a few round flat ones I formed with my hands). Maybe I’ll use a much smaller cookie cutter next time.

    Mmm…yummy! The 8th grader and I may try to make those stained glass cookies during break. Hopefully I can get it together this week and get our house stocked with food and goods for the next two weeks.

    I made batches of choco chips and sugar cookies. My crack sugar cookie icing is cream cheese, but this time I didn’t use as much powdered sugar. Not making that mistake again. I do love my sweets! Lovely flowers blooming. Yay for shawl knitting, I still have a shawl languishing on the needles!! Almost done with shopping, just need to get gift cards to restaurants at this point.
