The school called early this morning to say it would be another snow day due to the impending storm. Fortunately I had suggested to H that she work from home today so we are all housebound. I have big plans to knit and maybe do some laundry. Of course there are a pile dishes to wash too.
Why are there so many dishes? I make some baked rigatoni last night from a recipe I remember using ages ago. There used to be a product called Prego Pasta Bake. I never bought the sauce but improvised the same thing with my homemade sauce. It’s very easy and everyone here loves it. Into a 13X9 pan pour a pound of shaped pasta (ziti, rigatoni, the curly things with the hole down the middle). Add 26oz tomato sauce and 26 oz water. Stir. Cover tightly with aluminum foil. Bake at 425 for 30-40 minutes depending on how you like your pasta. Remove the foil, stir and then sprinkle on 2 cups mozzarella and return to the oven for about 10 minutes. Enjoy.
