The Rest Of The Story

As I was telling you the other day I was going to make ice cream to go with the cookies so we could have some homemade ice cream sandwiches. I used the light chocolate recipe from the Ben and Jerry’s Homemade Ice Cream & Dessert Book. If you really like homemade ice cream (and why wouldn’t you) buy this book. The recipes are easy to follow and absolutely delicious. They are a great jumping off point for making your own flavors too.

The combination of the delicious slightly soft cookies and the frosty cold ice cream makes the ice cream sandwiches heavenly. They are easy enough to make using a cookie scoop to scoop the ice cream into nice neat round little lumps that fit perfectly between two cookies.
